Gnocchi with Parmesan cheese sauce and baby spinach

Gnocchi with Parmesan cheese sauce and baby spinach are a creamy, tasty and very easy to prepare dish. These simple and delicious Italian dumplings are served with a velvety cream cheese, garlic and baby spinach sauce. It’s a perfect idea for a quick dinner or lunch during the week as they need to be prepared in less than half an hour and guarantee a very tasty and rich meal.

Ingredients

  • 500 g store bought gnocchi
  • 2 garlic cloves
  • ½ tbsp olive oil
  • 100 g cream cheese
  • 160 ml boiling or really hot water
  • 2 handful of baby spinach
  • 60 g gratet Parmesan cheese
  • salt and pepper to taste

Instructions

Instructions gnocchi with Parmesan cheese sauce and baby spinach

  • In a saucepan or cup, melt cream cheese with 160 ml of boiling or very hot water. Set aside.
  • Heat half a tablespoon of olive oil in a pan. Add two crushed cloves of garlic and cook over low heat until they become very aromatic but not too golden. Now add the water with the cheese and mix well. Add grated Parmesan cheese then stir to melt it completely. Cook over low heat for several minutes to reduce the liquid slightly as you cook the gnocchi.
  • Cook the gnocchi in plenty of salted water according to the instructions on the box. Meanwhile, add freshly ground pepper and baby spinach to the sauce. Stir, taste and add more salt and pepper if necessary.
    As soon as the gnocchi begin to float, drain them and add them to the prepared sauce. Raise the heat and finish cooking the gnocchi in the cheese sauce which should finish thickening with the starch from the gnocchi. Serve immediately.
