This simple ricotta cake is easy to prepare cake with very few ingredients. No eggs and butter needed. The cake’s texture is thick but still quite soft and the cinnamon brown sugar topping gives an extra crunch. It is a “hard times” recipe. The recipe has been slightly modified compared to “Sale e pepe” magazine.

I made two separate cakes. They did not rise or bake into a sponge cake. The whole cake was a thick cooked ‘gelatinous’ middle - but it did taste good lol. I threw them out.
I'm sorry to hear that. This is what in Italy we call a poor cake, it was prepared during hard times. It is not soft and spongy like classic sponge cake. I considered adding plain yogurt as I do with other eggless recipes.
You can also add baking powder to make it more light. Half a teaspoon should change the texture.
