If you are looking for a super quick and easy recipe for a great cake filling this whipped ricotta and honey cream is just perfect for you. This cream is light, velvety, simple and sweet at the right point. It is also prepared in just 5 minutes and with very few ingredients. You can use it to fill sponge cakes, prepare desserts with fruit or use it to fill puff pastry or shortcrust treats. The ricotta is whipped with the electric mixer and becomes velvety and smooth while the addition of whipped cream stabilizes it and makes it spreadable. The amount of honey is absolutely optional so as the type of honey you intend to use.

  • 250 g ricotta cheese
  • 50 ml cold whipping cream
  • 1 generous tbsp of honey

  • First, drain the ricotta cheese. Wrap it in a clean cloth and squeeze it so that it releases as much of the liquid as possible. You can also drain it overnight in the refrigerator over a fine sieve. If you use ricotta cheese straight from the box the cream will be much more liquid but still delicious. Collect it in a bowl and add honey and cold whipping cream.
  • Whip it for a few minutes with an electric whisk. It should become smooth and with a velvety texture. If you prefer, you can also whip the whipping cream aside and then incorporate it with a spoon. Once you have the desired consistency, taste and adjust with more honey if necessary.
