Coffee and whipped ricotta cream

Coffee and whipped ricotta cream is a super easy and quick to prepare. Perfect for filling cakes, cupcakes, donuts, puff pastry cannoli or any other sweet treat that comes to mind. It is also great for making desserts for coffee lovers. It goes perfectly with other rich creams such as whipped chocolate ganache or white chocolate whipped cream. You can prepare it in a few minutes and with very few ingredients. The ricotta is whipped which makes it smooth and light. The addition of ground coffee instead of instant coffee guarantees a deep and interesting texture. To make it sweet I used sweetened condensed milk but you can use powdered sugar, granulated sugar or another type sweetener of your choice.

Ingredients
- 160 g fresh cow’s milk ricotta cheese
- 1 large teaspoon (or more) of ground coffee
- 2 teaspoons sweetened condensed milk (or granulated sugar, or other type of sweetener)

Instructions coffee and whipped ricotta cream
In a bowl place previously drained ricotta. Whip it with electric whips for a couple of minutes until it becomes lump-free and very light.
Now add the good quality ground coffee and the condensed milk. Stir again with the hand whisk or with a spoon.

Wait one or two minutes and stir again to mix the ingredients well and to give the sugar and coffee time to melt or to release their flavor.
Taste and adjust with more coffee or condensed milk if necessary.

The ricotta and coffee cream is ready to be used in the way you prefer. From these ingredients I created 5 mini desserts similar to stracciatella by adding some pieces of chopped chocolate.
To be store in the refrigerator for up to two days before using it.
