The buttery dought with dry coconut is quick to prepare. The addition of Greek yogurt makes it light and soft. Discover how delicious an apple cake can be without cinnamon but with coconut and lemon aftertaste. This cake stays fresh for several days and is excellent for breakfast or snack for all months and different occasions.

Ingredients

  • 120 g white sugar
  • 125 g soft butter
  • 1 organic lemon (the zest)
  • 2 medium eggs
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 80 g dessicated coconut
  • 130 g natural or coconut Greek yogurt
  • 400-500 g apples
  • 100 g powdered sugar
  • 3 tbsp lemon juice
  • 2 tbsp dessicated coconut

  • Pour the whitesugar into a small bowl and add lemon zest. Now rub the peel with the sugar between your fingers to release the lemon oils and make the cake more aromatic.
  • Place the soft butter in a second bowl. Add the sugar with the lemon zest and whip using an electric whisk for a few minutes until the butter becomes light and frothy.
    Now, one by one, add the eggs, whisking each time after adding them to ensure they are incorporated perfectly.
  • Add sifted flour with baking powder and mix roughly. Add Greek yogurt, mix again and finally add 80 g of dessicated coconut.
  • Grease a 24cm round baking pan with a some butter and lightly dust it with flour. Pour the prepared batter in and level it evenly.
  • Peel your apples, remove the core and seeds and cut into cubes. Distribute the apple pieces evenly over the batter.
  • Bake in the preheated static oven at 170°C for 40 – 45 minutes or until the toothpick inserted in the center of the cake comes out clean. Once the cake is ready let it cool outside the oven while you prepare the glaze.
  • Mix the powdered sugar with lemon juice using the back of a spoon until there are no lumps. Now add dessicated coconut and mix again. Pour the glaze over the cake and as soon as it becomes cool serve immediately.
