Spinach and cheese savory quick bread

Fragrant and soft, quick savory bread with two types of cheese and spinach. Easy and delicious. Perfect with hummus or as a bruschetta.

Ingredients

  • 250 g frozen spinach
  • 1 garlic clove
  • 20 ml olive oil
  • salt and pepper to taste
  • 4 room temperature eggs
  • 80 ml olive oil
  • 25 ml milk
  • 250 g all-purpose flour
  • 0.5 tsp baking soda
  • 2 tsp baking powder
  • 70 g grated Pecorino cheese
  • 120 g cheese of your choice I used scamorza
  • salt and pepper to taste

Instructions: Spinach and cheese savory quick bread

  • For this recipe I used the silicone mould made by Silikomart – Raggio.
  • Heat 20 ml of olive oil in a pan, add frozen spinach, a clove of garlic, salt and cook over medium heat, stirring often, until the spinach is thawed and fragrant. Turn off the heat and let it cool down, discard the garlic, squeeze the spinach to loose some of the water and put it aside.
  • In a bowl mix olive oil and eggs
  • Add sifted flour, baking powder and the baking soda. Stir, add milk, grated pecorino cheese and squeezed spinach. Add a pinch of salt and pepper and stir again. Finally add diced cheese.
  • Mix all the ingredients and move the batter into a bundt cake pan. If you use a classic non-silicone baking pan, grease it and flour it slightly.
  • Bake in a preheated static oven at 200 °C for 50 minutes. After 30 minutes cover the bread with some aluminum foil so that it does not burn on the surface.

  • Ever since I made this for the first time at the start of quarantine it became an absolute hit in my fam. Now everyone’s addicted and I have to make it at least twice a week. Always following recipe to a tee, just switching between swiss chard and spinach and using various different cheeses. I don’t remember last time I ate regular bread after trying this one.
