Mixed salad with yogurt sauce

During hot spring days there is nothing better for a simple lunch than a nice mixed salad with yogurt sauce. This salad is super easy and quick to make. The yogurt sauce is light and also very flavorful thanks to the addition of mayonnaise, mustard and a dash of honey which adds a sweet note. You can customize this salad according to your preferences by adding other types of vegetables, legumes such as chickpeas and even something crunchy like croutons or nuts.
Mixed salad with yogurt sauce
Ingredients
Sauce
- 1,5 tbsp Greek yogurt or plain yogurt
- ½ tbsp mayo
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tsp honey

- Mixed salad lettuce, red and green lollo, baby spinach, Roman salad
- cherry tomatoes
- ½ apple
- rocket salad
- ½ cucumber
- almonds
Instructions

- In a small bowl,mix honey with lemon juice and mustard. Add mayonnaise and Greek yogurt. Mix well to mix the ingredients and make the sauce free from lumps. Taste and adjust with more mustard or honey if necessary.
- Arrange the sliced tomatoes, cucumber slices, almonds and mixed salad and rocket leaves on a serving plate, overlapping them, to create a messy but inviting dish. Finally add the sauce and serve immediately.
