Quick and easy egg appetizer for Easter

These quick and easy crackers with spiced cream cheese and hard-boiled egg are fun and simple to make appetizer for Easter. They are made with Ritz crackers which add a slightly sweet note but you can use any type of crackers you like. The cream cheese spread is prepared with a mix of spices and sauces mixed with finely chopped pickled cucumber. It is a spiced spread with a slightly sweet, salty and sour aftertaste that goes very well with the softness of boiled egg. You can decorate them to your liking for example with chives, pink peppercorn, ground black pepper, pickled olives, dried tomatoes, capers, smoked salmon and more.
Quick and easy egg appetizer for Easter
Ingredients
- 3-4 small or medium eggs at room temperature
- 120 g cream cheese
- 1 tsp mayo
- 1 tsp ketchup
- 1 tsp mustard
- ½-1 tsp paprika
- ½-1 tsp garlic powder (optional)
- 2-3 sweet and sour picked cucumbers
- 1 small onion or a half of a medium one
- 20 or more crackers

- To prepare boiled eggs. Put the eggs at room temperature in a pan, cover them with water and put on the heat. When the water comes to a boil you have to lower the heat slightly and set the timer for 8 minutes. After this time put your eggs immediately in cold water for at least 5 minutes. This will stop the cooking process and make the eggs easier to peel.
- While the eggs cool, prepare the cream cheese spread.
- In a bowl, mix the finely chopped cucumber and small onion. Combine the cream cheese, mayonnaise, ketchup, mustard, sweet paprika and garlic powder. Mix well.
- Take the shell off from your eggs and using a very sharp knife cut them into thin rounds. Using a piping bag or simply a teaspoon, garnish each piece of crackers with the prepared spread. Place them on a serving plate or cutting board and garnish with slices of hard-boiled egg. Add some capers, while on other pieces add spring onion or chili peper spread or other topping to your liking. Add some freshly ground pepper on top and serve. The spread will become evere more delicious after some hours of resting time.
