Ingredients

Vegetarian burger

  • 300 g zucchini
  • 0.5 tsp salt
  • 2 cans of chickpeas
  • 1 tsp oregano
  • 2 tsp tomato paste
  • 0.25 tsp cayenne pepper or chili pepper
  • 0.25 tsp cumin seeds or ground cumin
  • burger buns or bread slices
  • artichokes in oil
  • tomato slices
  • olive oil

Sauce

  • 50 g of sweet and sour gherkins I used Citres gherkins
  • 0.5 cup mayonnaise regular or vegan
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp brown sugar
  • 0.25 tsp cayenne pepper or chili pepper

Instructions

Instructions: Chickpea and zucchini burger with sweet and sour sauce

  • Prepare the burger sauce by mixing mayonese with ketchup, sugar, apple cider vinegar and cayenne pepper. Add chopped gherkins, mix and set aside.
  • Wash and cut off the zucchini tips. Grate them on a grater with large holes, sprinkle with salt, mix and put asside for 10 minutes. After this time, squeeze the zucchini in between your hands to remove the excess juices. Add previously rinsed chickpeas, oregano, cumin, cayenne pepper and tomato paste.
  • Coarsely crush the chickpeas with a fork and then mix all the ingredients. Set aside for 10 minutes to let all the flavours blend. Taste and adjust with salt if necessary.
  • Create 6 burgers. Heat a few tablespoons of oil and cook the chickpea burgers on a medium flame, 2 or 3 hamburgers at a time, on a non-stick frying pan with the lid on. Flip the burgers a couple of times during cooking until they become golden on the outside and well cooked.
  • Divide the burger buns in half and lightly toast them in the oven or in a frying pan. Spread the bun with sweet and sour sauce and place the burgers over the sauce.
  • Add tomato slices and a few pieces of artichokes in oil and serve.
