Savory tart with potatoes, leeks and goat cheese is an easy recipe to prepare as an appetizer or a tasty lunch. To prepare it you can use homemade savory shortcrust pastry or pasta matta or you can use a store bought one. It is a rich and nutritious rustic dish. The combination of leeks and potatoes is very flavourful while the filling with spreadable goat cheese adds the right note of acidity.

Ingredients
  

The base

  • 400 g all-purpose flour
  • 1 pinch salt
  • 6 tbsp olive oil
  • 150 ml sparkling water

The filling

  • 100 g spreadable goat's cheese
  • 1 tsp dried rosemary (optional)
  • 1 big potato
  • 1 leek
  • olive oil for the top
  • salt

  • In a bowl mix the flour with the salt. Add the oil and water and mix. Work the dough by hand until it becomes smooth. Create a ball, cover with a bowl to prevent it from drying out and let it rest for half an hour at room temperature.
  • Meanwhile, peel the potato and using a very sharp knife or a mandolin slicer, slice the potato very thinly. Place the prepared slices in a bowl filled with cold water and set aside.
  • Mix the goat cheese with some salt and chopped dry rosemary.
  • Roll out the dough into a disc with a thickness of 2 – 3 mm. Move the disc onto the round baking tray covered with baking paper and fill with the goat cheese filling.
  • Meanwhile, drain the potatoes and dry the slices carefully using kitchen paper. Place the roughly cut slices on top of the prepared filling and add the leek (the white and light green part) cut into slices. Fold the dough towards the center to cover the filling. Add a few more pinches of salt and pepper to the surface and add some olive oil to taste. Bake in a preheated static oven at 180°C for 25-35 minutes. Or until the potato slices are tender and fully cooked. If the tart browns too quickly, cover it with aluminum foil.
  • Remove from the oven and let cool slightly before serving.
