Light and thin crepes with spelt flour
Scorrere verso il bassoSpelt flour crepes are an excellent alternative to the classic thin crepes with white flour. The recipe is extremely simple, and the crepes come out perfectly golden, elastic and light. It’s a delicious idea for a sweet or savory breakfast, lunch or dinner. Try them stuffed with mushroom cream or in a sweet version with a thin layer of ricotta and jam.
Light and thin crepes with spelt flour
Ingredients
- 4 medium eggs
- 500 ml milk
- 1 pinch of salt
- 30 g melted butter
- 140 g spelt flour (I used wholemeal spelt flour)
Instructions
Light and thin crepes with spelt flour
- Crack into a bowl 4 medium eggs and mix them with a hand whisk. Add milk, a pinch of salt, melted butter and mix again until all the ingredients are combined.
- Now gradually add the spelt flour, stirring continuously with the whisk to eliminate any lumps. Once all the ingredients are mixed, place the bowl in the refrigerator for at least 30 minutes.
- Preheat a non-stick pan 20 cm wide and grease it lightly with little bit of oil. Mix the prepared batter which tends to put ehe wholemeal pieces of the flour on the bottom of the bowl. Using a ladle, pour the batter onto the pan, stirring it to create thin crepes. Cook the crepes for a short time, as soon as they begin to brown on the edges, turn them over using a silicone spatula and cook for another minute until they become golden on both sides.
- Place the prepared crepe on a plate and continue in the same way with the rest of the batter. Once cooked, fill as desired.
