Quick smoked salmon and cream cheese appetizers

These quick canapés with cream cheese and smoked salmon are very simple and easy to prepare appetizers. They are made with Ritz crackers which add a slightly sweet note but you can use any type of crackers you like. The spreadable cream cheese is garnished with chopped parsley and the green part of the spring onion which adds a spicy aftertaste. You can decorate them with olives, wild fennel or pink pepper corns or, like me, garnish them with avocado or dried tomatoes and capers.

Quick cream cheese and salmon canapés are a cold appetizers that can be prepered in 5 minutes. Simple finger food recipe with smoked salmon.

Ingredients

  • 180 g spreadable cream cheese
  • 14 pz Ritz crackers or other type of crackers
  • salt and pepper to taste
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley leaves
  • 2 tsp green parts from spring onions
  • smoked salmon
  • 14 avocado pieces
  • sun-dried tomatoes in oil
  • 14 capers in salt

Instructions

  • Drain the dried tomatoes from the oil and cut them into strips.
  • Rinse the capers in salt under cold water, pat dry and set aside.
  • Peel the avocado and cut it into cubes.
  • In a bowl, mix the chopped parsley leaves together with a pinch of salt and pepper, lemon juice, chopped green parts from the spring onion and spreadable cream cheese.
  • Using piping bag, or simply a teaspoon, garnish each piece of crackers with the prepared cream. Arrange them on a platter or cutting board and garnish with small pieces of smoked salmon. Add dried tomatoes together with a caper on some of them and use pieces of avocado on the other ones. Serve when needed.
