Mascarpone, condensed milk and strawberry dessert

If you are looking for a different dessert from the usual whipped cream and strawberries, this dessert with mascapone, condensed milk and strawberry cream is perfect for you. A mix of fresh spring fruit together with a delicate, sweet and velvety “camy” cream with condensed milk and mascarpone cheese. It is a dessert similar to the cheesecake cup but or a parfait, perfect for lovers of creams mixed with fresh fruit. This recipe requires a little more time and dedication but I assure you that it is so worth it.

Ingredients
  

  • 500 g strawberries
  • 4 tbsp sugar
  • 2 tbsp lemon juice
  • 2 tbsp potato or corn starch
  • 60 ml water
  • 300 g mascarpone cheese (cold)
  • 150 ml cold whipping cream (for the camy cream)
  • 100 g condensed milk
  • 150 ml cold whipping cream (for the dessert layers)
  • 1 tbsp powdered sugar
  • fresh strawberries for the decoration
  • almond flakes or crumbled pistachios (for the decoration)
  • cookies such as petit, digestive or others

Instructions
 

Mascarpone, condensed milk and strawberry dessert – quick strawberry jam

  • Wash and pat dry the strawberries. Remove the leaves and slice into 4. Place in a pan together with the sugar. Stir, cover the pan and turn on the heat.
  • Cook with the pan covered until the strawberries release their juice, then remove the lid, add lemon juice and mix. Cook over medium-low heat for 10 minutes, stirring often to prevent the fruit from sticking to the bottom of the pan.
  • In a small glass, mix well 60 ml of water with two tablespoons of potato starch. Add the prepared mixture to the strawberries and stir quickly. The fruit should thicken right away. Turn off the heat and mix a little more to prevent lumps from forming. Pour the prepared jam into a separate container and let it cool completely, then divide it into two parts.

Strawberry camy cream preparation

  • Whip 150 ml of cold cream and set aside.
  • With an electric whisk, whip the mascarpone with the condensed milk until the ingredients blend together and the cream becomes more compact.
  • Now add the whipped cream to the mascarpone mix and stir in it delicately with movements from bottom to top.
  • Finally, add the first half of the now cold strawberry jam. Mix it in slowly using a whisk or a spoon.

How to assemble the dessert

  • Whip the remaining 150 ml of cold whipping cream until stiff, adding a spoonful of powdered sugar towards the end.
  • Take three large dessert cups and crumble some cookies of your choice on the bottom. I recommend cookies that are not too sweet, perhaps with a pinch of saltiness such as digestive or petit cookies. Add the sweetened whipped cream divided between the three cups.
  • Now add the remaining strawberry cream. Decorate your dessert with the prepared camy cream. You can add it directly with a spoon or using a piping bag. Add flaked almonds or chopped pistachios and finally decorate everything with pieces of fresh strawberries. Store in the refrigerator and eat when needed.
