The recipe for soft fresh plum cake is so easy to prepare that you won’t believe it. Ingredients
  

  • 450 g of all-purpose flour
  • 2,5 tsp of baking powder
  • 200 g of white sugar
  • 170 g of melted butter
  • 150 g of whole plain yogurt or Greek yogurt
  • 4 eggs
  • 1 tsp of vanilla extract
  • 450 g of fresh plums
  • powdered sugar

  • For this recipe your yogurt and eggs should be at room temperature so I recommend taking them out of the fridge half an hour before.
  • In a bowl, sift 450 g of flour with 2 and a half teaspoons of baking powder. Add sugar and mix well. Now add melted butter.
  • Finally add the eggs, vanilla extract and yogurt. Gently mix until no more traces of flour are visible. If the batter is too thick, you can add another spoonful of yogurt.

Easy, quick and fluffy pie with plums – baking time

  • Line a 30 x 20 cm rectangular pan with baking paper. Pour over the batter and flatten it with a spoon. Wash and divide the plums in half. Remove the stone and place each part of the plum with the skin facing the batter. Space the plums apart to allow the cake to grow freely.
  • Bake in a preheated static oven at 170 ° C for about 40 – 45 minutes or until the toothpick inserted in the center of the cake comes out clean.
  • Remove from the oven and allow to cool completely before cutting into squares. Before serving, dust your cake with powdered sugar.
