Super light sandwich with ricotta and cucumber

An idea for an easy peasy sandwich with ricotta cheese and fresh cucumber. A mix of light and delicious flavors between Italian ricotta, thinly sliced cucumber, lemon zest and pink peppercorns is just mouthwatering. Inspiration found on a book of Polish cuisine.

Ingredients
- bread (me sourdough rye bread)
- 1 cucumber
- 150 g ricotta cheese
- salt to taste
- olive oil to taste
- pink peppercorns to taste
- lemon zest to taste

Instructions: Super light sandwich with ricotta and cucumber
Peel the cucumber and using a very sharp knife, mandoline slicer or a vegetable peeler create long and thin cucumber stripes.
Mix ricotta with a few drops of olive oil. Spread bread slices with ricotta and put on the cucumber strips. Garnish with lemon zest, some pink peppercorns, a pinch of salt.

Serve immediately.
