Honey and lemon glazed carrots

Glazed carrots in a pan with honey and lemon is a quick and easy vegetable side dish. Perfect with chicken or on a crunchy bruschetta with sharp cheese.

Ingredients
  

  • 500 g carrots
  • 1 tbsp salt for the boiling
  • 2-3 tbsp honey
  • 30 g butter
  • 1 lemon (only the zest)
  • grounf pepper to taste
  • 1 tsp thyme (optional)

  • Wash, peel and cut the carrots into rounds up to 5 mm thick. Put the carrots in a saucepan, add plenty of water and 1 tablespoon of salt. Bring to a boil and cook the carrots for 8-10 minutes or until tender but not too soft. Drain and set aside.
  • In a pan, melt the butter and honey. Add lemon zest and, if you like, a teaspoon of dried thyme. Add the carrots and ground pepper and mix well to cover. Cook for about 5 minutes over medium-low heat, stirring occasionally, until the carrots are completely tender and aromatic. Sprinkle with parsley or chives to taste then serve immediately.
