Ingredients
  

  • 1 egg
  • 0.5 cup frozen peas
  • 0.5 cup baby spinach
  • 0.5 cup milk
  • 2 tsp olive oil
  • 40 g or more grated Pecorino cheese or another type of hard cheese
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • salt to taste optional

Instructions: Savory pancakes with peas, baby spinach and pecorino cheese

  • Place baby spinach, thawed peas, egg, milk and oil in a blender and blend until smooth.
  • Add flour, grated cheese, baking powder and blend again until the batter is smooth. In case you did not use the pecorino but a less salty cheese add some salt.
  • Heat the pan, if necessary grease it with a little olive oil and pour a few tablespoons of batter creating 3 – 4 round pancakes. Cook for 2 minutes on medium-low heat side. Turn them and cook again so that they are golden on both sides.
