Patate in umido (Italian side dish) – tomato stewed potatoes

Patate in umido (tomato stewed potatoes) are a delicious traditional Italian side dish. A peasant dish that is very simple to prepare and goes perfectly with fish and meat.

Ingredients
- 1 kg potato
- 1 cup water
- 1 cup smooth tomato sauce
- 1 garlic clove
- 1 tbsp olive oil
- salt, pepper, chopped parsley leaves to taste

Instructions patate in umido
Heat the oil in a pan. Then add garlic and cook it for 2 minutes.
Add potatoes (previously peeled and cut into cubes). Stir in water, tomato sauce, salt, pepper and a handful of chopped parsley. Bring to a boil.

Reduce the heat and cook, stirring occasionally, until the potatoes are tender (it took 30 minutes in my case) and the sauce becomes thicker. If the sauce is getting thick too quickly add more water.

Taste, season with salt and pepper and serve.
