Delicate, creamy, cheesy cauliflower puree is a great competitor of the classic mashed potatoes. Soft and velvety mashed cauliflower side dish goes perfectly with fish, meat, creamy sauces with mushrooms or grilled vegetables.
- 1 medium cauliflower
- 1 tbsp butter
- 40 g cream cheese
- 1 small garlic clove
- 30 g grated Parmesan cheese
- 60 ml hot milk
- salt and pepper to taste
Instructions: Cauliflower puree
Clean the cauliflower by removing hard core and green leaves. Cut it into florets. Bring water to a boil in a pan (do not to add any salt ), add the cauliflower florets and cook for about 8 – 10 minutes. When cooked, drain well.
Place cauliflower, butter, two types of cheese and garlic clove in a blender (you can also use immersion blender).
Blend all the ingredients and gradually add hot milk until the mixture becomes thick and creamy. Adjust with salt and pepper and serve either hot or cold.
