A simple salad with cannellini beans and potatoes garnished with a mixture of parsley, vinegar, garlic and oregano. Easy and tasty.
- 1 handful parsley leaves
- 1 small garlic clove
- 2 tbsp olive oil
- 2 tsp wine vinegar
- 1 tsp dry oregano
- salt and pepper to taste
- 500 g potato
- 1 can white beans (I used cannellini)
- 150 g cherry tomatoes
30 minutes waiting time.
Instructions: Potato and white bean salad with garlic dressing
Cook the potatoes in salty water until they are tender. Drain and put aside until they cool down completely.
Mix vinegar with olive oil. Combine finely chopped parsley and garlic, oregano and a pinch of salt and pepper.
In a large bowl, combine potatoes previously cut into smaller pieces, beans and cherry tomatoes divided into wedges. Add the prepared sauce, mix and let rest for at least half an hour. Taste, season with salt and pepper if necessary and serve.
