The chimichurri sauce is a green sauce from Argentina made with fresh parsley and spices. Enhances flavors of meat and fish and can also be used to prepare marinades and to give more depth to many different dishes.
Traditional chimichurri sauce recipe. Perfect with meat and fish.
- 1 cup Italian parsley (only the leaves and tender twigs)
- 2 garlic cloves
- 2 tsp dried oregano
- 2 tbsp red wine vinegar
- 0.25 tsp dried red pepper flakes
- 0.25 tsp salt
- pinch pepper
- 0.5 cup extra virgin olive oil

Instructions Chimichurri sauce
Put parsley, garlic, oregano, vinegar, red pepper flakes, salt and pepper in a food processor and blend.
Slowly pour olive oil and blend again until everything becomes smooth and bright green. Let it rest for a couple of hours before serving.
